Job summary

Fairmont Hotel Vancouver invites skilled cooks to join our culinary team. As Cook II you will prepare and cook menu items across stations, prioritizing quality, food safety, and presentation to meet Fairmont standards in our fast-paced luxury kitchen.

This role offers competitive wages starting at $26.82/hour, with rates up to $33.53/hour for qualified Red Seal cooks, plus midnight shift premiums. Benefits include medical, dental, vision, life, disability, a company pension, and staff perks.

Qualifications

  • Culinary education, apprenticeship progress, or equivalent practical culinary experience.
  • Previous professional kitchen experience.
  • Red Seal Cook certification is strongly preferred.
  • FoodSafe Level 1 or equivalent.
  • Basic knowledge of food safety, allergens, and cooking methods.
  • Previous luxury hotel, high-volume restaurant, catering, or banquet experience preferred.
  • Experience working across multiple culinary stations.
  • Strong organization, reliability, and attention to detail.
  • Ability to prioritize and work efficiently in a fast-paced kitchen environment.
  • Strong communication and teamwork skills.
  • Professional, dependable, and committed to Fairmont service and safety standards.
  • Flexibility to work a variety of shifts, including early mornings, evenings, weekends, holidays, and overnight shifts as operationally required.

Responsibilities

  • Complete assigned mise en place and station setup accurately and on time.
  • Prepare and cook menu items according to established recipes, preparation methods, portion sizes, and presentation standards.
  • Monitor product freshness, temperatures, portioning, presentation, and stock rotation.
  • Maintain consistent quality and timing throughout service.
  • Coordinate effectively with other culinary stations and colleagues to support smooth and efficient service.
  • Maintain clean, sanitized, organized, and properly stocked work areas, tools, equipment, and storage areas.
  • Follow food safety, sanitation, allergen, and workplace safety requirements at all times.
  • Minimize food waste and promptly report shortages, product quality concerns, damaged equipment, hazards, or maintenance issues.
  • Communicate effectively with culinary colleagues and leaders, seeking guidance when service priorities change.
  • Protect hotel equipment, products, and other assets while maintaining appropriate product and inventory controls.
  • Follow departmental procedures, hotel policies, Fairmont brand standards, and the provisions of the applicable Collective Agreement.
  • Maintain professional grooming, hygiene, and uniform standards.
  • Participate in required briefings, meetings, training, audits, and service excellence initiatives.
  • Perform other duties reasonably assigned that are consistent with the nature and scope of the position.

At Fairmont Hotel Vancouver, every memorable dining experience begins in the heart of our kitchen. As a Cook II, you will be an important part of our Culinary team, preparing and cooking menu items across assigned stations while ensuring consistency, quality, food safety, and presentation meet Fairmont standards.

Physical Demands & Operational Requirements
  • Standing and walking for extended periods
  • Frequent repetitive hand and arm movements, bending, and reaching

  • Regular exposure to heat, steam, cold, sharp utensils, and commercial kitchen equipment
  • Ability to work safely and efficiently in a busy kitchen environment with changing service demands

Must be legally eligible to work in Canada. The hotel is unable to assist candidates in obtaining Canadian work authorization.
