Job description

SUMMARY:

Reporting to the Chef de Partie, this role assists with supervising all aspects of food production for banquets. The Banquet Cook will perform the assigned tasks while adhering to food safe practices and established culinary standards.

ACCOUNTABILITIES:

Enhance the reputation of the Vancouver Aquarium as a preferred event and visitor destination through consistent food preparation and the highest caliber of food:

  • Assist in the supervision of all aspects of food preparation, portioning, and food presentation as established through recipes and production sheets;
  • Maintain open lines of communication between Front and Back of house operations;
  • Supervise kitchen operations in the absence of the Executive Chef/Sous Chef/Chef de Partie;
  • Operate all kitchen equipment according to recommended operating instructions

Maintain a safe, sanitary and organized work area and kitchen:

  • Ensure strict adherence to guidelines outlined in the Food Safe program. All food items must be covered, labelled and dated;
  • Supervise all aspects of kitchen cleaning; keep standards procedures and levels of cleanliness enforced.

Consciously desires to improve Vancouver Aquarium and its processes by:

  • Promptly aid in Emergency protocol;
  • Maintain and support organizational safety standards;
  • Continually improve our impact on the environment and greening of operations through support of Environmental Management Systems (EMS) protocols;
  • Perform related duties and special projects as assigned.

JOB REQUIREMENTS:

  • Food Safe certification required
  • Proof of Hepatitis A vaccination or immunity required
  • 2 years of valid kitchen experience required, including 6 months of supervisory experience
  • Knowledge of produce, meat, fish and other various foods required
  • Excellent time management and multi-tasking skills
  • Strong communication skills
  • Strong team skills with an ability to work independently with minimal supervision
  • Ability to perform in fast paced high pressure environments;
  • Strong internal and external customer service skills with “can-do” attitude;
  • Active demonstration of the company’s values and mission;
  • Basic knowledge of Microsoft Office required.
  • Ability to stand for extended periods of time
  • Ability to safely bend, lift, move food products and other items (up to 50 lbs)
  • Ability to safely reach and stretch, in order to prepare food and working with various kitchen equipment
  • Be available during the week, including evenings, weekends and holidays is required

Wage Range: $20 - $30 / hour
