Job summary

Maple Leaf Sports & Entertainment Partnership (MLSE) is seeking an extern in the Restaurants and Catering team to support high-volume kitchen operations. You will rotate through restaurant kitchens, catering, and butchery under guidance from senior chefs to learn diverse culinary skills.

The externship emphasizes hands-on prep, knife skills, sanitation, and consistency, with shifts including evenings, weekends, and holidays.

Qualifications

  • Food Handler Certification (Basics.fst, Toronto Public Health, or equivalent) is required.
  • Knife handling skills are an asset.
  • Willing to learn and apply standardized recipe specifications within a designated time frame.
  • Available to work evenings, weekends and holidays as required.
  • Ability to work well under pressure in a fast-paced environment.
  • Excellent interpersonal and communication skills in a team-focused environment.

Responsibilities

  • Participate in the Externship Rotation, working periods in each restaurant kitchen, catering department, and butchery.
  • Gather, wash, cut, season, cook, and store quality ingredients efficiently.
  • Maintain a clean, organized and safe work area in accordance with Toronto Public Health guidelines.
  • Maintain personal hygiene, wear a clean uniform, and properly restrain hair at all times.
  • Ensure proper storage of all food ingredients with correct rotation.
  • Demonstrate safe use of kitchen equipment and maintain high quality and consistency.
  • Report equipment problems or product discrepancies to Lead Cook or Sous Chef.
  • Assist in training co-workers on product knowledge and teamwork.
  • Follow Occupational Health & Safety Act provisions and MLSE service standards.

Job Description

As a valuable member of the Restaurants and Catering team, you will deliverwinningservice in a high-paced, high-volume environment. Your externship periodwillbeworkedunder the direction ofChef dePartieand/or Sous Chef,andChefde Cuisine, to assist in the preparation of various food productsacrossourprogram.

Responsibilities
  • Participate in the Externship Rotation that will have you work periods of time in each of our restaurant kitchens, as well as our catering department and butchery to better grow your knowledge and understanding of the culinary world.
  • Gather, wash, cut, season, cook, and store quality ingredients in an efficient and effective manner.
  • Maintain a clean,organizedand safe work areain accordance withthe Toronto Public Health Board.
  • Maintain complete personal hygiene at all timeswhile on duty, such as washing hands at all necessary times, wearing a clean, pressed uniform, and properly restraining hair.
  • Ensure proper storage of all food ingredients in their respective areas, using proper rotation.
  • Demonstratecorrectuse of all kitchen equipment, in a safe and sanitary manner.
  • Maintaina high levelof quality and consistency.
  • Report all equipment problems and food product discrepancies to a Lead Cook and/or Sous Chef or Chef
  • Perform other duties as delegated byChef dePartieand/or Sous Chef,andChefde Cuisine.
  • Ability to train co-workers on product knowledge,specsand Teamwork.
  • Ability to direct and delegate tasks to co-workers
  • Work in compliance with the provisions of the Occupational Health & Safety Act
  • Adhereto MLSE service standards and policies
