Head Chef

We are currently seeking a dynamic Head Chef committed to quality and customer service. Apply now in Renner, South Dakota.

Primary Responsibilities:

The Chef is responsible for all kitchen functions, including food purchasing, receiving, quality control, scheduling, safety, sanitation, and cleanliness. Responsible for the training of kitchen and dish room employees in all aspects. Completes all Cook tasks, including assigned prep work and set up of Cook's station. Maintains product presentations, product quality, and cook time standards. Prepares all menu items according to designed recipes and specifications.

Specific Functions and Duties:
  1. Ensures all menu items are consistently prepared according to Safari Bar & Grill's recipes, portioning, plate presentations, and specifications.
  2. Responsible for ordering food products according to need. Ensures the orders received have the correct count and the condition of the product is received in accordance with Safari Bar & Grill’s policies and procedures.
  3. Conducts thorough inventory checks and accurately documents stock levels regularly.
  4. Controls food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes, and waste control procedures, including checking and maintaining proper food holding and refrigeration temperature control.
  5. Provides direct supervision of Cooks and Dishwashers. Responsible for the orientation and training of kitchen and dish room employees in all kitchen, cleanliness, and safety aspects.
  6. Efficiently schedules Cook and Dishwasher staff while considering labor costs, ensuring schedules are prepared and communicated promptly.
  7. Responsible for maintaining appropriate cleaning schedules for kitchen floors, walls, ceilings, hoods, other equipment, and food storage areas.
  8. Fills in where needed to ensure efficient operations.
  9. Works with GM to plan and price menu items, establish portion sizes, and keep updated recipes book for menu items.
  10. Ensures all equipment in the kitchen and dish room is kept clean and in excellent working condition.
  11. Makes employment and termination decisions. Works with GM on interviewing, hiring, disciplining, and terminating kitchen and dish room employees.
  12. Attends all scheduled employee meetings and brings suggestions for improvement.
  13. Supports and compliments GM. The GM relies on your supervisory role for smooth business operation. Your job effectiveness allows the GM to achieve success in their position by not having to interfere in yours. Be a positive and strong leader. Effectively communicate and reinforce company policies with positivity.
  14. Take care of your team’s well-being and needs.
  15. Use active listening, good communication, and problem-solving skills. Be a problem-solver. Work to solve any disputes or challenges that may arise, whether with employees, customers, vendors, or suppliers. Be ready to analyze and make quick, informed decisions, with a responsibility for results.
COOK TASKS:
  1. Completes all assigned prep work.
  2. Practices sanitary and safe food handling at all times.
  3. Cleans and sanitizes the work area before, during, and after shift.
  4. Completes assigned daily and weekly cleaning projects.
  5. Other duties as needed.
Qualification Standards:
  1. Previous kitchen management experience required.
  2. Experience in varied kitchen positions.
  3. Strong leadership skills.
  4. Strong organizational and decision-making skills.
  5. Communicate clearly and effectively.
  6. Able to place plates, utensils, pans, supplies, etc. on high and low shelves.
  7. Capable of safely using knives, slicing equipment, and other food preparation equipment.
  8. Mobility required during the entire shift.
