About the Role
We are looking for a Cost Controller to lead both the daily operational cost control functions and longer-term improvement initiatives across our growing network of outlets. This role plays a vital part in ensuring financial discipline, waste reduction, inventory integrity, and cost-efficiency across all procurement and kitchen operations.
You’ll operate at the intersection of finance, operations, and supply chain, working closely with outlet teams to enhance system compliance, optimize purchasing, and reduce inefficiencies—while embedding a strong culture of cost ownership across the organization.
Key Responsibilities:
Daily Operations & System Compliance
- Coordinate and place daily orders for raw materials, packaging, and supplies across outlets.
- Maintain and update purchasing systems, enforce supplier preferences, and prevent unauthorized purchases.
- Conduct daily/weekly stock counts, reconcile with system data, and monitor FIFO adherence.
- Enter and track waste data daily; escalate unusual trends to management.
- Ensure accuracy and timeliness of all inventory, purchase, and usage data entry.
Process Improvement & Cost Optimization
- Audit outlet processes (portioning, storage, preparation) to identify waste and inefficiencies.
- Recommend and implement cost-saving initiatives—ranging from recipe adjustments to supplier alternatives.
- Support teams with training and coaching on cost discipline and stock handling best practices.
- Drive initiatives that repurpose ingredient by-products or reduce overuse.
- Evaluate supplier performance in terms of pricing, reliability, and quality.
- Source and recommend better suppliers or negotiate improved terms with current vendors.
- Maintain documentation of all quotations, invoices, and supplier preference rankings.
Reporting & Analysis
- Generate daily, weekly, and monthly reports on stock status, cost variances, waste, and compliance.
- Monitor KPIs such as inventory variance, waste % vs. standard, procurement accuracy, and cost savings.
- Collaborate with leadership during audits, reviews, and operational planning.
Requirements:
- Proven experience as a Cost Controller, preferably in the F&B or hospitality industry.
- Strong analytical and financial reporting skills.
- Proficiency in cost control software and MS Excel.
- Ability to work independently and in a fast-paced environment.
