Job summary

Double SB Wines T/A Denton Wine is seeking a highly skilled, full-time Winemaker / Senior Assistant Winemaker to lead technical winery operations, quality control, and vintage management. You will coordinate daily winery operations, implement fermentation and maturation programs, and supervise cellar staff in a premium regional winery.

A Bachelor’s degree in oenology or wine science and 5+ years of post-qualification experience are required; strong leadership and capacity for extended peak hours

Qualifications

• Bachelor’s Degree in Oenology, Wine Science, Viticulture, or related discipline.
• Minimum of 5 years of full-time, post-qualification experience in commercial winemaking or advanced assistant winemaking.
• Proven knowledge of modern cellar machinery, laboratory chemistry, and fermentation management.
• Proven leadership with capacity to work extended hours during peak vintage periods.

Responsibilities

• Coordinate and manage daily winery operations, cellar processes, and fruit intake during vintage.
• Implement fermentation, filtration, cold stabilization, and barrel maturation programs.
• Conduct advanced laboratory analysis, including juice chemistry, sulfur management, and microscopic evaluations.
• Direct and supervise cellar hands and vintage staff to ensure health, safety, and biosecurity protocols.
• Participate in technical blending trials, sensory evaluations, and final product preparation.
• Manage winery records and compliance documentation via winery management software.

We are seeking a highly skilled, full-time Winemaker / Senior Assistant Winemaker to join our production team. Working closely with management, you will take a leading role in technical winery operations, quality control, and vintage management.

• Coordinating and managing daily winery operations, cellar processes, and fruit intake during vintage.
• Implementing and monitoring fermentation, filtration, cold stabilization, and barrel maturation programs.
• Conducting advanced laboratory analysis, including juice chemistry, sulfur management, and microscopic evaluations.
• Directing and supervising cellar hands and vintage staff to ensure strict adherence to health, safety, and biosecurity protocols.
• Participating in technical blending trials, sensory evaluations, and final product preparation.
• Managing meticulous winery records and compliance documentation via winery management software.

Required Qualifications and Experience

• A formal Bachelor’s Degree or higher qualification in Oenology, Wine Science, Viticulture, or a closely related discipline is mandatory.
• A minimum of 5 years of full-time, post-qualification experience in a commercial winemaking or advanced assistant winemaking role.
• Profound technical knowledge of modern cellar machinery, laboratory chemistry, and fermentation management.
• Proven leadership capability with the physical capacity to work extended, flexible hours during peak vintage periods.
