Job summary

Crystalbrook Bailey is seeking a Sous Chef for Pachamama, our Latin-inspired open-air bar in Cairns. You will lead daily kitchen prep, ensure flavour and presentation excellence, and contribute to menu development.

Working with the Chef de Cuisine and Executive Chef, you will coach the team, manage ordering and stock, control costs, and uphold food safety. This is a full-time, permanent role with rotating rosters.

Qualifications

• This role requires a strong culinary background in hotel or restaurant settings.
• Experience leading a kitchen team and delivering high-quality dining experiences.
• Interest in Latin-inspired flavours and sharing-style dining.

Responsibilities

• Lead daily kitchen preparation and service to a consistently high standard.
• Contribute ideas to menu development reflecting Pachamama’s character.
• Oversee ordering, stock control and food costs.
• Maintain food safety and hygiene standards.
• Provide practical coaching and direction during service.
