Beach Hotel Byron Bay | Full-time | Byron Bay, NSW
We’re looking for an experienced Sous Chef to join the kitchen team at Beach Hotel Byron Bay.
This is a hands-on leadership role for someone who enjoys being on the tools, leading a team and keeping a busy kitchen running smoothly.
Working closely with our Head Chef, you’ll play a key role in day-to-day kitchen operations, service, team development, food quality and kitchen standards.
What you'll be doing
- Leading a large kitchen team through high-volume à la carte and functions service
- Running the pass and coordinating service when required
- Building kitchen rosters around forecasts, trade levels, functions and staffing requirements
- Recruiting, onboarding, training and developing kitchen team members
- Supporting the Head Chef with day-to-day kitchen operations
- Managing section allocations and kitchen staffing during service
- Ensuring consistent food quality, presentation and portion control
- Supporting menu development, specials and recipe implementation
- Assisting with ordering, stock control and food cost management
- Monitoring waste, stock rotation and kitchen organisation
- Maintaining food safety, hygiene and allergen management standards
- Working closely with our Front of House team to deliver smooth service
- Taking responsibility for the kitchen when the Head Chef is not on site
About you
- Proven experience as a Sous Chef or in a comparable senior kitchen leadership role
- Experience leading a large team in a high-volume hospitality environment
- Has strong cooking and service skills across multiple sections
- Can stay calm, organised and decisive when service gets busy
- Takes pride in food quality, consistency and presentation
- Understands stock control, ordering, food costs and waste management
- Enjoys training and developing other chefs and cooks
- Communicates well with both the kitchen and Front of House teams
- Leads by example and contributes to a positive kitchen culture
