Lucas Collective is hiring for Grill Americano Sydney, building its BOH foundations under a dynamic leadership team. You will oversee senior sous/sous chef roles, guiding kitchen operations during a new opening and setting the stage for long-term success.

The role requires leading a fast-paced kitchen with focus on quality, cost control and staff development, while maintaining a positive, proactive culture across the team.

Qualifications

• Experience as a Senior Sous or Sous Chef in a fast-paced restaurant.
• Asian cuisine knowledge is highly regarded.
• Proven ability to lead a high-performing team and manage operations.
• Understanding of food safety standards and inventory management is advantageous.
• Willingness to work a rotating roster including weekends and public holidays.

Responsibilities

• Lead BOH operations and ensure quality, consistency and efficiency.
• Drive cost control, training and staff development.
• Collaborate with front-of-house to ensure smooth service flow.
• Mentor kitchen staff and uphold high standards during busy shifts.
