Sydney Showground in Sydney, NSW, is seeking an experienced Sous Chef to lead a high-volume kitchen during daily operations and major events. Reporting to the Executive Chef, you will drive menu development, mentor a casual kitchen team, and ensure exceptional quality and presentation.

You will manage stock, control food and labour costs, and enforce rigorous food safety standards in a fast-paced events environment.

Qualifications

• Certificate in Commercial Cookery (required).
• Food safety, hygiene, and HACCP qualifications.
• WHS training.
• Proven experience supervising teams in a high-volume kitchen.

Responsabilités

• Assist senior chefs with menu development and food innovation.
• Lead and supervise casual kitchen staff, including rostering and performance management.
• Oversee stock control, rotation, ordering, and stocktakes.
• Manage food and labour costs to meet budget targets.
• Ensure compliance with Food Safety Plan and quality standards.
