Job summary

Applejack Hospitality is launching a brand-new CBD venue in Sydney and seeks a Restaurant Manager focused on delivering premium service and bringing people together. You will lead and develop the front-of-house team, oversee floor operations, and drive guest experiences from day one.

Join a fresh, high-energy team and help shape culture, processes, and standards while managing rosters, budgets, and guest recovery in a premium/high-volume setting.

Qualifications

• Minimum 2–3 years’ recent leadership experience in a premium/high-volume restaurant or bar.
• Working knowledge of labour planning, budgets, stock and POS systems.
• Strong wine/spirits and food knowledge with confident, guest-facing communication.
• Current NSW RSA (or ability to obtain before start).

Responsibilities

• Lead, coach and roster FOH teams to deliver exceptional guest experiences across all services.
• Oversee floor operations, section allocations, reservations and waitlist management.
• Drive, coach and develop team members in sequence-of-service, table-touches, upselling and guest recovery protocols.
• Manage labour against budgets; interpret daily/weekly P&L and service KPIs.
• Maintain compliance with RSA/RSF, incident reporting and safety protocols.
• Ensure cash-up, POS and end-of-day procedures are accurate and compliant.
