Job summary

NRMA Parks and Resorts is seeking a full-time qualified Chef for Murramarang Resort on the NSW South Coast. This hands-on role covers our Beach Bistro, takeaway outlet and conference/event operations, across breakfast, lunch, dinner and events.

You'll undertake general and specialised cooking duties, maintain high standards, monitor hygiene, assist with stock and contribute to safe, compliant kitchen practices in a busy resort environment.

Qualifications

• Trade qualification in Commercial Cookery.
• Experience working as a qualified Chef in a busy restaurant, hotel, resort or functions environment.
• Experience preparing high-volume meals whilst maintaining quality and consistency.
• A sound understanding of modern Australian cuisine and contemporary food trends.
• Experience catering for conferences, events or weddings will be highly regarded.
• A passion for food, presentation and creating memorable dining experiences.
• Strong organisational skills and the ability to prioritise in a fast-paced environment.
• Demonstrated ability to work collaboratively within a kitchen team.
• Possess a DoFoodSafely Certificate of completion.
• Flexible attitude to working a 7-day roster, including weekends, evenings and public holidays.
• Immediate availability or the ability to commence in the short term is highly desirable.

Responsibilities

• Undertake general and specialised cooking duties to a high standard.
• Work within established menu, recipe and food cost frameworks, ensuring consistency, quality and compliance with company standards across all dining venues.
• Work across a variety of dining outlets, supporting breakfast, lunch, dinner and event service.
• Maintain food quality, consistency and presentation during high-volume service periods.
• Monitor the hygiene of food preparation areas, equipment and storage facilities.
• Assist with stock control, ordering and minimising food wastage.
• Support conference, event and wedding catering operations.
• Under the direction of the Head Chef, assist with kitchen management, portion control and supervision of junior team members.
• Maintain a safe and compliant work environment in line with food safety and WHS requirements.
