Job summary

NRMA Parks & Resorts in Australia’s coastal locations is seeking an experienced Head Chef to lead a busy kitchen operation across our Bistro, Skippy's Takeaway, and events facilities. You will design and deliver memorable dining experiences across à la carte service, weddings and conference catering, while mentoring a capable kitchen team.

You will work closely with the Resort Manager and Group F&B Manager to ensure creative, high-quality menus, supplier governance and food safety, balancing

Qualifications

• Formal qualification in Commercial Cookery.
• Head Chef or Senior Chef experience in a resort, hotel, club, restaurant or hospitality venue.
• Experience delivering food service for events, weddings, conferences and group functions.
• Current Food Safety Supervisor Certification.
• Experience managing food costs, stock control, ordering and kitchen budgets.
• Strong leadership skills with the ability to motivate and develop high-performing teams.
• Experience working within structured operational and corporate governance frameworks.
• Excellent planning, organisational and communication skills.
• Passion for fresh, quality food and delivering memorable dining experiences.
• Willing to be part of a greater team and lead from the front.

Responsibilities

• Lead and inspire the kitchen team with clarity and hands-on leadership.
• Oversee kitchen operations across the Bistro, Takeaway, events and conference facilities.
• Deliver exceptional food offerings for events, weddings, conferences and group bookings.
• Ensure all food is prepared and presented to company standards and guest expectations.
• Manage department rosters to meet operational requirements.
• Monitor food costs, waste management, and menu performance against budget and KPIs.
• Order food products to ensure consistent menu availability.
• Collaborate on menu development with the Group Food & Beverage Manager.
