Job summary

The Apollo Restaurant Group in Sydney is opening Baptiste, a new Parisian restaurant, and seeks a hands-on Sous Chef to join the opening team. You will work with the Head Chef and Senior Sous to shape service standards, kitchen systems, and team development in a fast-paced environment.

As a strong leader with a calm approach, you’ll manage preparation, service, stock, food safety and cost control while building a collaborative brigade that takes pride in its work.

Qualifications

• Experience as a Sous Chef or strong Junior Sous Chef ready for more responsibility.
• Attention to detail without losing sight of the people on the team.
• Ability to lead a busy service and give clear feedback.

Responsibilities

• Lead the kitchen team through preparation and service.
• Maintain consistency, presentation and food quality.
• Train and develop chefs across the brigade.
• Manage ordering, stock rotation, food safety and kitchen organisation.
• Support rostering, labour management and food cost control.
• Build clear systems and strong working habits from the opening.
• Foster a respectful kitchen where communication is open and pride in work.
