Job summary

The Grand Hotel in Frankston is seeking an experienced Full Time Sous Chef to join Pegasus Leisure Group’s busy kitchen. You will work closely with the Head Chef to lead daily operations, deliver high-quality food, ensure safety standards and create memorable guest experiences.

Qualifications

• At least 3 years’ experience in a professional kitchen with leadership or supporting a busy service.
• Certificate III in Commercial Cookery (or equivalent).
• Current Food Safety and Food Allergens Certificate, or willingness to obtain.

Responsibilities

• Work with the Head Chef to keep the kitchen running smoothly and service on point.
• Prepare and plate quality dishes that look great and wow guests.
• Lead and motivate the kitchen team, fostering a positive, supportive culture.
• Maintain food safety, cleanliness and kitchen standards at the highest level.
• Assist with stock management, ordering and supplier relationships to minimise waste.
