Job summary

QT Melbourne, part of EVT Limited, is seeking a dedicated Sous Chef to lead daily kitchen operations across multiple outlets. You will ensure quality, consistency, and efficiency in a fast-paced, 5-star environment in the heart of Melbourne’s theatre district.

You will manage a rotating roster, develop junior chefs, and drive food cost controls while upholding exacting standards and guest satisfaction. This permanent role offers career growth within EVT’s hospitality network.

Qualifications

• Experience as Sous Chef or Senior Chef de Partie in premium hotel/restaurant environments.
• Strong technical cooking skills across multiple cuisines.
• Experience leading and training kitchen teams.
• Solid understanding of food cost control and waste minimisation.
• Knowledge of WHS requirements in commercial kitchens and safety standards.

Responsibilities

• Manage and coordinate food production across all hotel kitchen outlets while upholding high culinary standards.
• Supervise and verify food prep, mise en place, and service readiness before opening.
• Monitor rosters, delegate duties, and step in on sections as needed for service.
• Control food costs through stock rotation, ordering, and minimizing waste.
• Ensure standard recipes are followed and menu trends stay current across outlets.
• Hire, train and develop kitchen staff to maximise productivity and morale.
• Maintain a clean, safe, and hygienic kitchen environment in line with WHS and grooming policies.
• Collaborate with F&B managers and front-of-house to keep operations well-coordinated.
