The role offers leadership across high-volume operations, budget management, and KPI-driven performance, with a focus on delivering exceptional guest experiences and driving commercial success in a dynamic hotel environment.

Qualifications

• Proven experience leading a high-volume commercial kitchen.
• A track record of managing labour costs, food cost percentage and supplier negotiations.
• Strong people leadership - coach, set standards and build a stable, motivated team.
• Comfort working with budgets, KPIs and monthly reporting.
• Creativity balanced with commercial discipline.
• Stamina and resilience for a fast-paced, physically demanding kitchen environment.

Responsibilities

• Build and lead a well-run kitchen team with proactive rostering and strong day-to-day leadership.
• Drive food cost performance through purchasing discipline, portion control and waste reduction.
• Strengthen supplier relationships to achieve better purchasing outcomes.
• Ensure consistent food quality, presentation and menu execution across outlets.
• Embed simple, trackable KPIs in daily kitchen operations to drive continuous improvement.
• Mentor and develop your team and create a kitchen culture people want to be part of.
• Partner with hotel leadership to run the kitchen autonomously.
