The ideal candidate has a minimum Certificate IV in Commercial Cookery and at least two years of professional kitchen experience, with strong leadership, menu development and cost-control skills to ensure quality, stock control, and adherence to safety standards

Qualifications

• Minimum Certificate IV in Commercial Cookery or higher in a relevant discipline.
• At least two years of experience in a professional kitchen.
• Proven ability to work under pressure in fast-paced kitchen settings.
• Experience supervising kitchen teams and coordinating service during busy periods.
• Proficient in operating and maintaining a range of commercial cooking equipment.
• Skilled in menu development and efficient kitchen inventory management.
• Excellent communication and collaboration skills with both kitchen and front-of-house staff.

Responsibilities

• Ensure all food is prepared according to business and industry standards.
• Maintain stock levels of all kitchen supplies.
• Review the menu every three months.
• Plan menus and set processes as needed based on costing.
• Estimate costs and ensure all purchases stay within the budget.
• Ensure compliance with food handling and sanitation standards.
• Follow proper handling and maintain correct temperatures for food products.
• Ensure correct stock rotation procedures are followed.
• Implement health and safety procedures in the kitchen.
• Assign tasks and supervise staff in the preparation and presentation of food.
• Review weekly and monthly schedules to meet forecast and budget requirements.
• Teach new staff the skills required to perform their roles to the required standards.
• Delegate duties to kitchen staff as per menu requirements.
• Provide staff with feedback on their performance to support their development.
• Minimise wastage by carefully supervising food preparation methods.
• Ensure proper hygienic storage methods are used to prevent loss.
