Pt Leo Estate is seeking a Junior Sous Chef for the Wine Terrace, a fast-paced, guest-facing dining space on the Mornington Peninsula. You will lead sections during service, mentor team members and uphold HACCP standards in a premium culinary environment.

• Strong understanding of modern Australian cuisine and seasonal produce.
• Confident in leading sections during service.

• Eagerness to grow into a Sous Chef or leadership role.

Responsibilities

• Support daily kitchen operations and service delivery
• Assist in leading and mentoring kitchen team members
• Ensure consistent food quality, presentation, and timing
• Maintain cleanliness, hygiene, and food safety standards (HACCP)
• Assist with prep, ordering, and stock control
• Work closely with FOH to ensure smooth service flow
• Contribute to menu execution and seasonal changes
• Help drive a positive, calm, and disciplined kitchen culture
