Job summary

Kisuya Japanese Restaurant in Bathurst (Central West NSW) is hiring an experienced Full-Time Chef to join our busy kitchen. You will prepare and cook high-quality Japanese dishes, maintain hygiene standards and contribute to menu development.

We seek a reliable candidate with at least 3 years in a commercial kitchen, knowledge of Japanese cuisine is highly regarded, and the ability to work in a fast-paced team.

Qualifications

• Minimum 3 years of commercial kitchen experience.
• Experience in Japanese cuisine highly regarded.
• Strong knowledge of food preparation, cooking techniques and kitchen operations.
• Good understanding of food safety and hygiene requirements.
• Ability to work efficiently in a fast-paced environment.
• Ability to work independently as well as part of a team.
• Flexibility to work across a rotating roster, including evenings, weekends and public holidays.

Responsibilities

• Prepare and cook high-quality Japanese dishes according to restaurant standards.
• Prepare ingredients and food items required for daily service.
• Follow recipes, portion controls and presentation standards set by the restaurant.
• Maintain consistent food quality, taste and presentation.
• Assist with developing new dishes, seasonal specials and menu improvements.
• Select and use quality ingredients to achieve the best flavour and presentation.
• Organise and coordinate food preparation and cooking during service.
• Ensure all meals are prepared accurately and in a timely manner, particularly during busy periods.
• Set up and maintain kitchen stations according to restaurant guidelines.
• Monitor stock levels and determine appropriate quantities of food and ingredients to order.
