Tandoor & Thai is seeking a Chef – Indo-Thai Fusion to lead a busy kitchen in Whittlesea, VIC. You will plan menus in consultation with management and cook a wide range of Indian, tandoor, Thai-inspired and fusion dishes.

Key duties include operating the tandoor, ensuring food safety, training staff and coordinating kitchen activities during service. Evening, weekend and holiday availability is required for a full-time role.

Formación

• Commercial cookery qualifications or relevant industry experience.
• Strong Indo-Thai fusion and tandoor cooking experience.
• Experience with Indian curries, sauces, marinades, breads and tandoori dishes.
• Thai cuisine or Indo-Thai fusion experience welcomed.
• Knowledge of food safety and commercial kitchen procedures.
• Ability to maintain food quality and presentation.
• Organisational and time-management skills.
• Ability to work under pressure in a busy kitchen.
• Able to work independently or in a team.
• Available for evenings, weekends and holidays.

Responsabilidades

• Plan and develop menus with management.
• Prepare, season and cook Indian, tandoor, Thai dishes.
• Prepare curries, gravies, sauces, marinades, naan and other breads, kebabs and tandoori dishes.
• Operate the tandoor and other cooking equipment safely.
• Regulate temperatures of ovens, grills, tandoors and other equipment.
• Estimate food requirements and assist with cost control.
• Order food supplies and monitor stock.
• Maintain high standards of food safety, hygiene, sanitation and allergen management.
• Train and supervise kitchen staff.
• Coordinate food preparation during service.
• Ensure meals are prepared and served efficiently and consistently.
• Cater for dietary requirements and special requests.
