Job summary

Chai Biryani Dosa (CBD) is seeking experienced Chefs to join the team in Werribee, Victoria. You will prepare Indian dishes with a focus on Hyderabadi dum biryani, tandoor items and South Indian tiffins, maintaining established recipes and high standards.

The role offers full-time hours with a salary of 75,000–85,000 AUD plus superannuation, plus opportunities for sponsorship for the right candidate. You will lead and train kitchen staff while ensuring food safety and quality.

Qualifications

• Trade certificate qualified Chef with at least 1 year experience in chef, sous chef or equivalent role.
• Demonstrated command of Hyderabadi dum biryani, South Indian tiffins and cuisine—technique, not just familiarity.
• Proven ability to manage food cost, ordering and portion control.
• Experience scheduling, supervising and training kitchen staff.
• Current Food Safety Supervisor certificate.

Responsibilities

• Prepare and cook Indian dishes to established recipes and standards, focusing on biryani, tandoor items and tiffins.
• Examine foodstuffs on delivery to ensure quality and report shortfalls.
• Regulate temperature of ovens, tandoor, grills and other cooking equipment.
• Season food during cooking according to recipes and personal judgement.
• Portion food, plate dishes and add gravies, sauces, raita and garnishes to specification.
• Store food in temperature-controlled facilities and maintain stock rotation.
• Prepare dishes for customers with food allergies or intolerances.
• Assist in estimating daily food requirements and mise en place.
• Inspect food prep and serving areas for safe, sanitary handling.
• Maintain a clean work environment, observing regulations for food handling and storage.
