Rustica Sourdough Bakery Cafe in Melbourne’s South Yarra invites an experienced operator to own the venue’s results. You will run front of house and manage labour, margin, and sales, reporting directly to the Operations Manager and owner.

You will lead a large front-of-house team, roster for trade, control costs, and drive growth while maintaining Rustica standards across the store's service and offerings.

Qualifikationen

• 4+ years managing high-volume cafés, restaurants or hospitality venues.
• A record of hitting wage, COGS and sales targets, with measurable results.
• Experience leading large front-of-house teams in high-volume venues.
• Confidence with rostering, POS reporting and stock control systems.
• Strong specialty coffee knowledge.
• Availability for weekend trade within the roster.

Aufgaben

• Labour: roster to trade and hit wage targets.
• Margin: manage ordering, waste control and stocktakes; hit COGS targets.
• Sales growth: lift average spend and grow catering/back- of-house sales.
• Team: hire, set standards, develop staff; front-of-house hiring decisions are yours.
• Standards: deliver Rustica product and service per SOPs and systems.
• Reporting: weekly numbers to Operations Manager and owner.
