Tathra Hotel is seeking an experienced and passionate Head Chef to lead our kitchen team in one of the South Coast's most iconic coastal destinations. This is an exciting opportunity for a motivated culinary professional who thrives in a fast-paced environment and is committed to delivering exceptional food, outstanding guest experiences, and strong kitchen leadership.

As Head Chef, you will oversee all aspects of kitchen operations across our busy food outlets, driving quality, consistency, innovation, and team performance while contributing to the ongoing success of the business.

Key Responsibilities

• Lead, inspire, and develop a dedicated kitchen team
• Create, implement, and regularly update seasonal menus
• Manage food costs, purchasing, stock control, and supplier relationships
• Maintain exceptional food quality, presentation, and service standards
• Ensure full compliance with food safety, hygiene, and WHS regulations
• Recruit, train, mentor, and develop chefs, apprentices, and kitchen staff
• Monitor labour costs and kitchen productivity
• Work collaboratively with management to achieve business goals and growth
• Drive continuous improvement in kitchen systems, processes, and culture
• Champion the use of fresh, local, and seasonal produce wherever possible

About You

We are looking for a chef who brings strong leadership, commercial awareness, and a genuine passion for hospitality.

Proven experience as a Head Chef, or an accomplished Sous Chef ready to step into a senior leadership role

Strong leadership skills with the ability to motivate, mentor, and develop high-performing teams

Extensive knowledge of contemporary Australian cuisine and international influences

Demonstrated success in managing food costs, kitchen budgets, and stock control

Experience working in high-volume hospitality venues

Strong understanding of food safety legislation, hygiene standards, and workplace health and safety requirements

Excellent organisational and time-management skills

Ability to remain calm and effective under pressure

A creative and innovative approach to menu development

Passion for delivering exceptional food and memorable guest experiences
