You will own kitchen performance, drive culinary execution, manage food cost and procurement, and coach your brigade to high standards while maintaining strict safety and HACCP discipline.

Qualifikationen

• Experience leading a kitchen brigade at a premium dining operation.
• Proven ability to translate culinary direction into exceptional food and service.
• Strong understanding of food cost, procurement, labour and waste management.
• Experience coaching and developing junior leaders within a kitchen.
• Rigorous approach to food safety, allergen controls and HACCP.

• Lead the brigade and drive culinary execution across all services.
• Establish prep, briefing, service and close routines for peak performance.
• Own food cost, COGS, labour, procurement and waste to improve commercial results.
• Develop Sous Chefs and future leaders; coach and mentor the team.
