Job summary

Moon Dog Wild West Geelong is seeking an experienced Head Chef to lead the kitchen for a new Western-themed venue in Geelong, opening around December. You will recruit, train, and manage the kitchen team, develop a strong menu with Tex-Mex/Americana offerings, and work closely with ops leaders to ensure exceptional food quality and service.

You will drive food cost control, safety, and consistency across regular service and events, while shaping team culture and delivering outstanding guest

Qualifications

• Minimum 2 years’ experience in a similar role with proven leadership in the kitchen.
• Ability to lead and train a kitchen team across busy service and events.
• Experience planning and costing menus for Tex-Mex/Americana and pub-style offerings.

Responsibilities

• Ensure high-quality food across the venue for regular service and functions.
• Manage food costs and meet budgets.
• Maintain Food Safety and OH&S standards.
• Contribute to menu development and seasonal offerings.
• Oversee ordering and stock management; check quantity and quality of products.
