Ace Hotel Wagga Pty Ltd operates Romano's Hotel in Wagga Wagga and seeks an experienced Head Chef to oversee a high-volume kitchen with a proud hospitality legacy. The role focuses on leadership, menu direction and operational excellence.

In this full-time position you will develop seasonal menus, control costs, enforce food safety, and lead a dedicated kitchen team across busy service periods. Salary AUD 90K–100K plus superannuation reflects expertise and responsibility.

Qualifications

• 7+ years of experience in a management capacity at the Head Chef level.
• Relocation to Wagga Wagga if based elsewhere.
• Hospitality or culinary qualification preferred.

Responsibilities

• Create and update menus based on seasonal availability and cost.
• Oversee all kitchen operations and ensure consistency and food safety.
• Manage inventory, stock control and ordering to minimise waste.
• Recruit, train and supervise kitchen staff to form a high-performing team.
• Enforce health regulations and maintain a clean, safe kitchen environment.
• Monitor food and labour costs to meet budget targets and profitability.
• Collaborate with management, front-of-house and suppliers for seamless service.
• Stay updated on legislation and industry standards.
