Job summary

Oscars Group is seeking a Head Chef to lead the opening of a brand-new premium Japanese restaurant in Sydney. You will shape the culinary direction, build a talented kitchen brigade and set high standards for authentic Japanese techniques and presentation.

You will drive menu development, oversee operations, mentor staff and manage costs while delivering an outstanding dining experience. This is a hands-on leadership role with career development opportunities across a growing hospitality group.

Qualifications

• Proven experience as a Head Chef or Senior Sous Chef in a premium Japanese restaurant.
• Strong knowledge of Japanese ingredients, techniques and cooking methods.
• Experience in menu development, kitchen operations and financial management.
• Exceptional leadership and staff development abilities.
• Hands-on approach with attention to detail and culinary excellence.
• Full Australian working rights.

Responsibilities

• Lead the opening of a brand-new premium Japanese restaurant.
• Develop and execute an exceptional Japanese-inspired menu, showcasing authentic techniques, premium ingredients and innovative flavours.
• Recruit, train, mentor and inspire a high-performing kitchen team.
• Oversee all kitchen operations, ensuring consistency, quality and exceptional presentation.
• Manage food costs, labour budgets, ordering, stock control and kitchen profitability.
• Maintain the highest standards of food safety, hygiene and operational compliance.
• Work collaboratively with the broader management team to deliver an outstanding dining experience.
• Bring fresh ideas, creativity and a genuine passion for food to the restaurant.
