Greenroof Hotel in Hamilton/Sydney region is seeking a hands-on Head Chef to run the kitchen, working closely with owners and the leadership team to deliver top-quality pub cuisine and service.

You will lead a diverse kitchen, plan menus, manage costs, ensure food safety, and mentor staff, with a busy service and events calendar.

Qualifications

• Extensive experience as a Head Chef or Sous Chef stepping up.
• Proven ability to lead a busy kitchen and manage staff.
• Strong knowledge of food safety standards and kitchen operations.

As Head Chef, you'll take responsibility for the day-to-day running of the kitchen, working closely with the owners and wider leadership team to deliver a high standard of food and service.

Key responsibilities

• Leading, motivating and developing the kitchen team
• Managing day-to-day kitchen operations and service
• Maintaining consistently high food quality, presentation and portion control
• Menu planning, development and seasonal specials
• Managing food costs, GP, ordering and stock control
• Maintaining appropriate food safety, hygiene and kitchen compliance standards
• Managing kitchen rosters and labour costs
• Minimising food wastage and maintaining effective kitchen systems
• Training and mentoring kitchen staff
• Working closely with management on functions, events and promotions

About you

• An experienced Head Chef, Sous Chef ready to take the next step
• A confident and hands-on kitchen leader
• Organised, reliable and able to work calmly in a busy service environment
• Passionate about producing quality pub food consistently
• Strong on food safety, kitchen standards and compliance
• Comfortable managing food costs, stock and wastage
• A good communicator who can lead a diverse kitchen team
• Someone who takes pride in their kitchen and their team
• Flexible and willing to get stuck in when the venue is busy
• Comfortable working evenings, weekends and busy service periods as required by the role
