Job summary

Langlands, Melbourne's premier dining destination, is seeking a Head Chef to lead the restaurant's culinary direction and day-to-day operations. You will shape seasonal menus, cultivate a high-performing kitchen team and deliver exceptional dining experiences in partnership with the Director of Food & Beverage.

We value a chef with a strong produce-led philosophy, open-fire techniques, and a clear point of view.

Qualifications

  • An experienced Head Chef or accomplished Sous Chef ready to lead a premium restaurant.
  • Strong restaurant experience with a passion for produce-led cooking and open-fire techniques.
  • Proven ability to lead, mentor and develop high-performing kitchen teams.
  • Solid understanding of food cost, labour and inventory management.
  • Calm, organised and confident leading a busy service.
  • Ambitious to define your own culinary style within a premium restaurant environment.

Responsibilities

  • Lead and evolve the culinary direction of Langlands.
  • Develop seasonal menus with a strong sense of identity, seasonality and place.
  • Balance creativity, craftsmanship and commercial performance across menu development and kitchen operations.
  • Recruit, mentor and develop a high-performing kitchen team while fostering pride and continuous improvement.
  • Manage food costs, labour, purchasing and inventory to achieve operational and financial objectives.
  • Maintain top standards of food quality, presentation, safety and kitchen compliance.
  • Collaborate with the Director of Food & Beverage on restaurant strategy, events and marketing initiatives.
  • Work with front-of-house to deliver a seamless guest experience.
  • Support private dining and events that showcase Langlands.
  • Continue building Langlands' reputation as Melbourne's leading dining destination.

About the role

Langlands is entering its next chapter.

Following an extensive renovation and renewed focus on dinner, we're looking for a Head Chef to lead the restaurant's next evolution.

As Head Chef, you'll lead the culinary direction and day-to-day operation of Langlands, working closely with the Director of Food & Beverage to shape seasonal menus, develop a high-performing kitchen team and deliver exceptional dining experiences.

We're looking for a chef with strong foundations, a clear point of view and a passion for quality produce, technique and consistency.
