Geebung RSL in Brisbane’s north is seeking a seasoned Head Chef to build a positive kitchen culture and a profitable catering operation, overseeing our Element Bistro, The Cove Kitchen, and two cafe outlets, as well as a busy function catering arm.

You will lead day-to-day operations, drive menu management, control labour costs and margin, ensure food safety standards, and mentor a skilled kitchen team while collaborating with management and catering supervisors.

Formación

• Proven experience as a Senior Sous Chef or Head Chef for a minimum of two years.
• Formal culinary qualifications (Certificate Level or Diploma).
• Full working rights with no VISA restrictions.
• Formal certifications including Food Safety Supervisor.
• Strong commitment to WHS and food hygiene practices.
• Demonstrated leadership and ability to mentor staff.

Responsabilidades

• Daily purchasing and food production planning.
• Support the kitchen team in a hands-on capacity and lead by example.
• Drive consistent standards, procedures, quality control and efficiencies.
• Control labour costs and productivity.
• Set the standard in menu management, portion control, wastage and margin management.
• Oversee stock rotation, stock control and inventory management.
• Work closely with management and catering supervisors.
• Drive kitchen hygiene and food safety standards.
• Oversee equipment maintenance, repairs and safety programs.

Geebung RSL has built a strong focus on its catering operations including our very popular 150+ seat Element bistro, 100+ seat The Cove kitchen, 2 x café outlets and a busy function and events catering operation. The catering operation generates over $3M in annual revenue.

Geebung RSL is looking to engage a suitably qualified and experienced Head Chef to Build A Positive Kitchen Culture & Profitable Catering Operation while achieving the following:

• Lead day to day kitchen operations with a clear vision, energy and purpose
• Daily purchasing and food production planning
• Support the kitchen team in a hands‑on capacity and lead by example
• Drive consistent standards, procedures, quality control and efficiencies
• Control labour costs and productivity
• Share your creative and culinary talents to ensure you lead by example
• Set the standard in menu management, portion control, wastage & margin management
• Responsible for stock rotation, stock control and inventory management
• Work closely with management, functions manager and catering supervisors
• Drive kitchen hygiene, compliance and food safety standards
• Oversee kitchen equipment maintenance, repairs and safety programs

The successful applicant will hold the following qualifications and attributes:

• Proven experience as a Senior Sous Chef or Head Chef for a minimum of two (2) years
• Formal culinary qualifications (Certificate Level or Diploma)
• Full working rights with no VISA restrictions
• Formal certifications including Food Safety Supervisor
• Strong commitment to WHS and food hygiene practices
• Strong, supportive and respectful communication & leadership style
• Ability to mentor, train and provide constructive performance feedback
• Experience in a multiple location catering operation within a club or hotel
• Ability to perform under pressure, lead and mentor by example
• Confident with Microsoft applications, supplier portals and technology
• Exhibit a strong work ethic and positive ‘can-do’ attitude
• Demonstrate pride, initiative and commitment to your role and career
