Job summary

Last St Brewery in Beechworth is seeking a Head Brewer to lead all brewing operations, ensuring quality, safety and efficiency across production. You will report to the Operations Director and drive product innovation while developing the brewing team and contributing to strategic growth.

The Head Brewer will act as an ambassador for Last St Brewing at industry events, festivals and collaborations, shaping the future of our award-winning craft range.

Qualifications

• Commercial brewing experience.
• Strong understanding of brewing science and production systems.
• Excellent organisational and communication skills.
• Ability to manage multiple priorities.

• Formal brewing qualifications.
• Experience with quality management systems.
• Experience working within a growing craft brewery.

Responsibilities

• Lead all brewing operations from grain to packaged product.
• Develop, refine and maintain recipes across core and seasonal ranges.
• Manage production scheduling and brewing priorities.
• Ensure consistent product quality across all batches.
• Oversee cellar operations, filtration, carbonation, packaging and warehousing.
• Maintain accurate production records and documentation.
• Lead, mentor and develop the production team.
• Foster a positive, collaborative and high-performing culture.
• Assist with recruitment, onboarding and performance development.
• Promote a strong safety-first culture.
• Collaborate on new product development and launches.
