Job summary

The Head Brewer at Last St Brewery & Distillery leads all brewing operations, ensuring quality, safety and efficiency across production. Reporting to the Operations Director, this role drives product innovation, develops the brewing team and supports strategic growth.

Beyond production, the Head Brewer acts as an ambassador for Last St, representing the business at industry events, collaborations and customer engagements while maintaining a strong safety‑first culture.

Qualifications

  • Oversee cellar operations, filtration, carbonation, packaging and warehousing.
  • Maintain accurate production records and documentation.
  • Lead, mentor and develop the production team.
  • Foster a positive, collaborative and high‑performing culture.
  • Assist with recruitment, onboarding and performance development.
  • Promote a strong safety‑first culture.
  • Collaborate on new product development and forecasting production needs.
  • Support new product launches from concept through to commercial production.

Last St Brewery & Distillery is a proudly family-owned business operating from one of Australia’s oldest and most unique brewery sites. Established in 1872, our beautifully restored brewery combines more than 150 years of history with an ambitious vision for the future. Supplied by our own pristine alpine spring water well beneath the brewery, we produce award-winning beers, spirits and liqueurs enjoyed across Australia.

Position Summary

The Head Brewer is responsible for leading all brewing operations, ensuring exceptional quality, consistency, safety and efficiency across production. Reporting to the Operations Director, the Head Brewer is a key member of the leadership team and will drive product innovation, develop the brewing team, improve production systems and contribute to the strategic growth of the brewery.

This role extends beyond production. The Head Brewer will also act as an ambassador for Last St Brewing, representing the business at industry events, festivals, collaborations and customer engagement opportunities.

Key Responsibilities
Brewing & Production
  • Lead all brewing operations from grain to packaged product.
  • Develop, refine and maintain recipes across the core and seasonal range.
  • Manage production scheduling and brewing priorities.
  • Ensure consistent product quality across all batches.
  • Oversee cellar operations, filtration, carbonation, packaging and warehousing.
  • Maintain accurate production records and documentation.
Quality & Continuous Improvement
  • Maintain and continually improve quality assurance systems.
  • Drive production efficiencies and process improvements.
  • Monitor product performance and implement corrective actions where required.
  • Champion innovation while maintaining consistency across the range.
Leadership
  • Lead, mentor and develop the production team.
  • Foster a positive, collaborative and high-performing culture.
  • Assist with recruitment, onboarding and performance development.
  • Promote a strong safety-first culture.
  • Collaborate with the Head of Innovation, sales team, Operations Director and owners on new product development.
  • Assist in forecasting production requirements.
  • Support new product launches from concept through to commercial production.
  • Contribute ideas that improve profitability, efficiency and customer experience.
Brand Ambassador
  • Represent Last St Brewing at festivals, trade shows, industry events and collaborations.
  • Participate in brewery tours, media opportunities and educational sessions where appropriate.
  • Build relationships with customers, wholesalers, suppliers and industry partners.
  • Help communicate the story behind our brewery and products
Compliance
  • Ensure compliance with food safety, workplace safety and relevant legislation.
  • Maintain brewery equipment and coordinate servicing where required.
  • Ensure accurate inventory management and stock control.
