Job summary

W Melbourne’s Curious Bar seeks a Head Bartender to lead a high-energy team and elevate the guest experience in the heart of Melbourne’s CBD. You will drive cocktail program development, menu engineering, and seasonal beverage concepts while ensuring exceptional service and cost control.

You’ll manage talent rostering, training, and daily operations, partnering with the kitchen and wider hotel team to deliver memorable experiences for guests and locals alike.

Qualifications

• Current Victorian RSA and valid Australian working rights are essential.
• Experience supervising in a fast-paced upscale bar/F&B environment is required.
• Flexible to work weekends, late nights, and public holidays.
• Knowledge of inventory, costs, expenses and cash handling procedures.

Responsibilities

• Assist in daily supervision of bar operations and drive menu planning.
• Own and drive beverage strategy including seasonal menu developments and cocktail concepts.
• Support rostering, timesheets, leave management and workforce administration.
• Maintain beverage performance, quality, cost control and financial targets.
• Monitor beverage trends and opportunities for innovation and market leadership.
• Lead training to improve guest and staff satisfaction.
• Assist in opening/closing procedures and beverage ordering processes.

What We Expect Of You

• A current Victorian RSA and valid Australian working rights is essential
• Experience bartending and supervising/managing in a fast-paced upscale bar/F&B environment is required
• Flexibility to work various shifts including Saturdays, late nights, and public holidays
• Knowledge and understanding of financial knowledge, such as inventory, costs, expenses, and all cash handling procedures and policies
• Driven for Results; setting high standards of performance for self and others; assumes responsibility for work objectives; initiating and monitoring progress towards accomplishment goals; proactively acts and goes above and beyond
• Previous experience in hotels is advantageous
• Confidence engaging with guests, and leading and working as part of a team

A Glance At What You Will Do

• Assist in the daily supervision of bar operations and drive menu planning, assisting bartenders during peak service and leading the execution of all service standards
• Own and drive the overall beverage strategy including leading seasonal beverage menu developments, cocktail creations and menu engineering; ensuring the program remains innovative, commercially successful and aligned with the venue concept
• Support talent rostering, daily timesheet approvals, leave management and related workforce administration
• Maintain accountability for beverage performance, including product quality, cost control and financial targets
• Monitor beverage trends and competitor activity to identity opportunities for innovation and market leadership
• Strive to continually improve guest and talent satisfaction; such as through leading training needed to accomplish goals
• Support opening and closing procedures, and support beverage ordering processes to ensure stock levels align with business demands
• Supervises daily shift operations in absence of Venue Manager.
• Ownership of stock takes, inventory management, variance investigations and cost control initiatives
• Be passionate about the guests’ service experience, but also have an eye for detail – from the money that moves through hands, to the information provided to guests, to the quality of drinks
• Maintain presentation and service standards across the restaurant and bar areas
• Work collaboratively with the kitchen and wider hotel team
• Take pride in product knowledge, accuracy, and operational excellence
• Represent the W brand through confident, professional, and energetic service
