Job summary

Baker Bleu in Sydney is seeking an experienced Head Barista to lead our coffee programme in the Double Bay bakery, overseeing the barista team and maintaining top-quality espresso and milk-based drinks.

You will own the coffee operation, manage workflow during peak periods, mentor staff, and ensure consistency in taste, speed, and service in a high-volume setting.

Qualifications

  • Strong barista experience in a high-volume, fast-paced hospitality environment.
  • Experience leading, training and developing a coffee team.
  • Excellent knowledge of espresso fundamentals including dial-in and milk texturing.

Responsibilities

  • Lead and develop the barista team and maintain high coffee standards.

  • Ensure speed of service while preserving beverage quality and consistency.

Baker Bleu kicked off in 2016 as a tiny sourdough spot with a big mission: bake ethical, insanely good bread for Melbourne. Fast-forward 10 years and we’ve grown into five stores across two states, bringing back real bread and pastry through the craft of long-fermentation sourdough.

We now roll out everything from classic loaves to bagels, pastries, sourdough pizza and stacked sandwiches—plus a growing wholesale range loved by top restaurants in Melbourne and Sydney. We’re always evolving, collaborating and pushing the craft forward.

We’re on the hunt for an experienced Head Barista to lead the coffee team at our Double Bay bakery. Just off the buzzing village strip, our bakery features a purpose-built pastry kitchen and a dedicated coffee section where the magic happens daily.

As Head Barista, you’ll take ownership of the coffee operation — leading and developing the barista team, maintaining exceptional coffee standards, managing workflow and ensuring every cup represents the quality Baker Bleu is known for.

This is a great opportunity for an experienced barista ready to step into a leadership position, or an established Head Barista looking for their next challenge.

  • A proactive approach to troubleshooting equipment and operational issues
