Job summary

QT Sydney, Gowings, is seeking an Assistant Restaurant Manager to lead a premium dining team across service periods. You will support the Venue Manager to deliver elevated food and beverage experiences to VIP guests and hotel guests, ensuring smooth service and outstanding guest satisfaction.

You will mentor a medium-sized team, manage shifts, uphold licensing, RSA and health and safety standards, and contribute to budgeting and cost control while showcasing a wine-forward, guest-centric

Qualifications

• 2+ years in an Assistant Restaurant Manager role or similar in high-volume, premium venues.
• Proven ability to deliver elevated guest experiences for VIPs and hotel guests.
• Experience guiding medium-sized restaurant teams with staff development.
• Passion for wine/beverages and leading tastings and pairings.
• Understanding of budget management and P&L to support decisions.
• Creative, team-first mindset in a fast-paced, design-led environment.

• Cultivate a sales culture, implementing and tracking up‑selling and on‑selling strategies
• Ensure full compliance with licensing laws, RSA requirements, and health & safety standards
• Uphold QT and Parlour's grooming, presentation, and service‑style standards
• Actively participate in team briefings, training sessions, and operational meetings

What You’ll Bring

• 2+ years' experience in an Assistant Restaurant Manager role or similar within high-volume, premium hospitality venues (hotel experience a plus, not essential).
• Proven ability to deliver a high-level guest experience that exceeds expectations for VIP clientele and hotel guests.
• Experience assisting in the management of medium-sized restaurant teams, with a focus on developing and training staff.
• A passion for wine and beverage, with the confidence to lead tastings, pairings, and guest‑facing storytelling.
• Understanding of budget management, cost control, and P&L analysis to support data‑driven decision‑making.
• A creative, team‑first attitude and commitment to excellence in a fast‑paced, design‑driven environment.
