Job summary

Currumbin RSL on the Gold Coast is seeking an Executive Sous Chef to be the operational leader of the kitchen, overseeing daily service and upholding culinary standards. You will work closely with the Executive Chef to drive performance across the brigade and provide hands-on leadership and coaching to the wider team.

Qualifications

• Extensive experience in a senior kitchen leadership role.
• Ability to lead large teams in high-volume environments.
• Strong rostering, labour management and cost control experience.
• A genuine passion for mentoring and developing people.
• Excellent communication and conflict-resolution skills.
• Hands-on leadership style and willingness to lead from the front.
• Strong organisational and problem-solving skills.

Responsibilities

• Lead daily kitchen operations and coordinate service across multiple outlets and functions.
• Monitor labour and rostering to meet operational and budget requirements.
• Oversee food quality, consistency and presentation standards.
• Support menu development, specials and seasonal offerings.
• Mentor, coach and develop chefs, apprentices and kitchen stewards.
• Foster a positive, respectful and high-performing kitchen culture.
• Maintain food safety, WHS and compliance standards.
• Manage stock control & purchasing and assist the Exec Chef with supplier relationships.
• Work collaboratively with front-of-house and leadership teams to deliver outstanding guest experiences.
