Job summary

The Dunes Beach Resort (by Eco Resorts) in Mindarie, WA seeks an Executive/Head Chef to lead a 20-chef brigade across Sandara, the kiosk/café, alfresco bar, retro bar, and wedding/event offerings. You will shape a modern Australian food philosophy for a pre-opening journey, focusing on coastal produce and guest experiences.

You will supervise menu development, kitchen design input, supplier onboarding, rostering, cost controls, and high-volume events, ensuring consistency and profitability.

Qualifications

  • Minimum 4 years of senior kitchen leadership experience in hotels, resorts, or multi-outlet venues.
  • Proven success delivering premium food at scale for weddings and events.
  • Strong background in modern Australian cuisine with coastal produce.
  • Experience managing a 15–20 chef team across multiple outlets.
  • Solid budgeting, COGS, labour management, and forecasting skills.
  • Exceptional leadership, communication and mentoring abilities.

Responsibilities

  • Lead pre-opening activities: menu development, kitchen design input, equipment selection, supplier onboarding, and recruitment.
  • Develop and execute modern Australian menus across all outlets and wedding/event offerings.
  • Drive excellence in weddings and events, delivering premium, scalable menus.
  • Build and manage a 20-chef brigade, fostering creativity, accountability and teamwork.
  • Oversee kitchen operations: rostering, ordering, inventory, food safety, and cost control.
  • Collaborate with F&B Manager, Events team and GM to align culinary with guest expectations and revenue goals.
  • Implement budgeting, forecasting, COGS, and labour planning for profitability.

Job Description

As Executive/Head Chef, you will lead the full culinary direction of Dunes Beach Resort, overseeing a brigade of approximately 20 chefs across multiple outlets and high-volume event operations. You will play a pivotal role in our pre-opening journey, crafting a modern Australian food philosophy that celebrates coastal produce, seasonal creativity, and exceptional guest experiences.

Key Responsibilities
  • Lead all culinary pre-opening activities, including menu development, kitchen design input, equipment selection, supplier onboarding, and recruitment of a high-performing kitchen team.
  • Develop and execute modern Australian menus across Sandara, the kiosk/café, alfresco bar, retro bar, and all wedding and event offerings.
  • Drive excellence in weddings and events, delivering premium, consistent, and scalable menus for receptions, ceremonies, corporate functions, and large-format celebrations.
  • Build, mentor, and manage a 20-chef brigade, fostering a culture of creativity, accountability, teamwork, and continuous development.
  • Champion food quality, presentation, and consistency, ensuring every dish reflects the resort's coastal identity and Eco Resorts' brand standards.
  • Oversee all kitchen operations, including rostering, ordering, inventory control, food safety compliance, and cost management.
  • Collaborate closely with the Food & Beverage Manager, Events team, and General Manager to align culinary offerings with guest expectations, revenue goals, and market positioning.
  • Implement strong financial controls, including budgeting, forecasting, COGS management, and labour planning to maximise profitability across all outlets.
  • Build strong supplier relationships, prioritising local, sustainable, and seasonal produce wherever possible.
  • Support marketing initiatives, contributing to content creation, menu launches, seasonal activations, and promotional events.
  • Champion a positive, inclusive, and high-performance kitchen culture, ensuring your team feels valued, supported, and inspired.
