Job summary

The Langham, Melbourne invites applications for an Executive Chef to lead our culinary team and shape the next chapter of our food and beverage journey across Melba Restaurant and Aria Bar & Lounge.

Reporting to the Managing Director, you will drive culinary excellence, manage costs, mentor chefs, and maintain the highest standards of quality, consistency, and guest experience in a luxury hotel setting.

Qualifications

• Significant Executive Chef experience within a premium hotel, luxury hospitality, or high-volume dining environment.
• Strong reputation for culinary creativity and innovation.
• Demonstrated success leading multiple outlets, including restaurants, bars, banquets, and large-scale events.
• Exceptional leadership, coaching, and talent development capabilities.
• Strong commercial acumen with experience managing budgets, food costs, labour productivity, and financial performance.
• Deep knowledge of food safety, allergen compliance, and operational best practice.

Responsibilities

• Be hands-on and able to work with the team to drive change; lead and inspire a large and diverse culinary brigade.
• Develop innovative food concepts, menus, and seasonal offerings that enhance guest satisfaction and market positioning.
• Drive culinary excellence, ensuring exceptional presentation, consistency, quality, and flavour across all outlets.
• Collaborate closely with Food & Beverage, Sales, Events, and Commercial teams to create memorable dining and event experiences.
• Deliver strong business performance through effective labour management, food cost control, forecasting, and productivity improvements.
• Champion food safety, hygiene, allergen management, and quality assurance standards throughout the operation.
• Build a culture of coaching, development, and succession planning while fostering colleague engagement and retention.

About The Role

Reporting directly to the Managing Director, the Executive Chef is a key member of the hotel leadership team responsible for driving culinary excellence across all food and beverage outlets and events. This role requires an exceptional leader who combines creativity, commercial acumen, and operational expertise to deliver memorable dining experiences while maintaining the highest standards of quality, consistency, and profitability.

You will be instrumental in evolving our culinary identity, elevating guest experiences, inspiring high-performing teams, and ensuring that every dish reflects the luxury, refinement, and attention to detail synonymous with The Langham brand.

The role will focus on further enhancing the guest experience and culinary direction of Melba Restaurant and Aria Bar & Lounge, ensuring these signature venues continue to set benchmarks in Melbourne's competitive hospitality landscape.
