Job summary

Langlands Restaurant & Bar in Melbourne is recruiting a Head Chef to direct the culinary program and daily kitchen operations. You will shape seasonal menus, lead a high-performing team, ensure consistency and quality, and partner with leadership on strategy and events.

We expect a chef with a clear point of view, commitment to produce-led cooking, and the drive to build a distinctive culinary identity with support from Hyatt leadership and marketing.

Qualifications

  • Experience as Head Chef or senior sous chef leading a premium restaurant.
  • Strong focus on produce-led cooking, grill and open-fire techniques.
  • Proven ability to lead, mentor and develop high-performing kitchen teams within a fast-paced environment.

Responsibilities

  • Lead and evolve the culinary direction of Langlands.
  • Develop seasonal menus with a strong sense of identity, seasonality and place.
  • Balance creativity, craftsmanship and commercial performance across menu development and kitchen operations.
  • Recruit, mentor and develop a high-performing kitchen team while fostering pride, discipline and continuous improvement.
  • Manage food costs, labour, purchasing and inventory to achieve operational and financial objectives.
  • Maintain high standards of food quality, presentation, safety and kitchen compliance.
  • Partner with the Director of Food & Beverage on restaurant strategy, events and marketing initiatives.
  • Collaborate with front-of-house and beverage teams to deliver a seamless guest experience.
  • Support private dining, special events and activations to showcase Langlands.

About the role

Following an extensive renovation and renewed focus on dinner, we're looking for a Head Chef to lead the restaurant's next evolution.

As Head Chef, you'll lead the culinary direction and day-to-day operation of Langlands, working closely with the Director of Food & Beverage to shape seasonal menus, develop a high-performing kitchen team and deliver exceptional dining experiences.

We're looking for a chef with strong foundations, a clear point of view and a passion for quality produce, technique and consistency.

This is an opportunity to shape the future of Langlands while building your own culinary identity, with genuine creative freedom supported by Hyatt's leadership and marketing teams.

Qualifications

  • Strong restaurant experience with a passion for produce-led cooking, grill and open-fire techniques.
  • A chef who values produce, technique, consistency and attention to detail.
  • A proven ability to lead, mentor and develop high-performing kitchen teams.
  • Strong commercial acumen, including food cost, labour and inventory management.
  • Calm, organised and confident leading a busy service.
  • Ambitious to define your own culinary style within a premium restaurant environment.
  • An excellent communicator who builds strong relationships across the kitchen, front-of-house and broader hotel team.
