Job summary

Mamasan Restaurant Group seeks an Executive Chef to lead two kitchens on the Gold Coast, Broadbeach and Nobby Beach. You will shape culinary direction, oversee menus and events, and drive performance across both venues.

You will bring 8+ years of senior kitchen leadership, deep Asian cuisine knowledge, and a proven ability to manage multi-site operations, costs and teams while maintaining exceptional guest experiences.

Qualifications

• Senior leadership experience with 8+ years in fast-paced, high-quality venues.
• Deep knowledge of Asian cuisine and hands-on oversight of all kitchen sections.
• Experience running more than one kitchen or precinct.
• Strong commercial skills: food costing, labour management and financial reporting.
• Proven track record in recruiting, training and mentoring chefs.
• Ability to build collaborative teams with clear, respectful communication.
• Calm, organized leadership under pressure in busy service and events.
• Good judgment aligning business needs with guest experience.

Responsibilities

• Lead the creative direction of menus for two venues, staying true to each identity.
• Design and launch innovative, commercially viable menus with seasonal updates.
• Oversee quality control across both venues and events.
• Plan and deliver menus for VIP functions, private dining spaces and special collaborations.
• Build, lead and mentor kitchen teams across both sites; recruit and train staff.
• Manage COGs, labour and operating costs within budget; roster strategically.
• Ensure safety, allergen management and WH&S compliance across kitchens.
