Job summary

Mantra Lorne is seeking an Executive Chef to lead the kitchen, curate menus, mentor staff, and ensure exceptional dining experiences for guests at Victoria’s beachfront property. You will oversee operations, collaborate with management and suppliers, and maintain high standards of food quality and presentation in a dynamic resort setting.

Qualifications

  • Previous experience as an Executive, Head or Senior Sous Chef.
  • Proven menu development skills with seasonal ingredients and presentation.
  • Strong cost control and budget management abilities.
  • Excellent team leadership and staff supervision.
  • Strong communication and professional presentation.

Responsibilities

  • Develop and update menus with high-quality, locally sourced ingredients.
  • Oversee daily kitchen operations, scheduling, and hygiene.
  • Ensure consistent taste, presentation, and portion control.
  • Manage food costs and minimise waste to maximise profitability.
  • Hire, train and supervise kitchen staff to maintain smooth operation.
  • Collaborate with restaurant management and suppliers to coordinate dining experiences.

Mantra Lorne is located in the coastal town along the Great Ocean Roan, spread across 12 acres of landscaped gardens, boasting undeniable beachfront accommodation offering heritage hotel rooms and modern one‑and‑two‑bedroom apartments. The Larder, on‑site restaurant, offers daily breakfast, lunch, and dinner, all crafted from locally sourced ingredients.

Proudly housing the largest residential conference venue in regional Victoria, Mantra Lorne can host groups of up to 600 guests for bespoke corporate and private events.

Purpose

As the Executive Chef, you are the leader in our world of culinary creations! Your guidance and expertise are instrumental in nurturing your kitchen team's talents as they craft delectable dishes that linger in the memories of diners. Mentoring your staff, overseeing food preparation, and thoughtfully curating enticing menus, all while maintaining a smoothly functioning and secure kitchen operation to guarantee an enjoyable dining experience for every guest.

Primary Responsibilities
  • Develop and update menus, including selecting ingredients, creating recipes, and ensuring variety and quality
  • Oversee the daily operations of the kitchen, including staff scheduling, inventory management, and kitchen hygiene
  • Supervise the cooking process, ensuring that dishes are prepared to the highest standards in terms of taste, presentation, and portion size
  • Manage the kitchen's budget, control food costs, and minimise waste to maximise profitability
  • Hire, train, and supervise kitchen staff, including chefs, cooks, and kitchen assistants, to ensure a smooth operation
  • Collaborate with restaurant management, front‑of‑house staff, and suppliers to coordinate the overall dining experience and address any issues
Skills & Experience
  • Previous experience as an Executive, Head or Senior Sous Chef
  • Proven menu development skills, crafting innovative dishes with seasonal ingredients, accommodating dietary needs, and maintaining top‑notch presentation
  • Take great pride and passion in the food you produce with exceptional attention to detail
  • Strong organisational abilities for preparation, planning, and cost control
  • A natural team player that loves the synergy of a great team, yet can work autonomously with ease
  • Personal presentation and communication skills are imperative, along with a positive energy and attitude
