Job summary

Skilled Jobs Australia is seeking qualified and experienced cooks for a large estate kitchen in Melbourne. You will prepare, create and decorate food, uphold hygiene, and help deliver high-quality, innovative menus using local produce in our in-house dining room.

Requirements include AQF Certificate III with at least two years on-the-job training or AQF Certificate IV, or three years of relevant experience. Knowledge of Australian food safety and HACCP is essential.

Qualifications

• AQF Certificate III with at least two years on-the-job training or AQF Certificate IV.
• Or at least three years of relevant experience may substitute for the formal qualifications.
• Experience in preparation, creation, and decoration of food items.
• Eamining foodstuffs to ensure quality (quality control).
• Plan, develop and estimate food costs when ordering food supplies.
• Monitor quality of dishes.
• Prepare and cook food demonstrating a variety of cooking techniques.
• Season food during cooking.
• Portion food.
• Keep kitchen and enforce hygiene regulations.
• Enthusiasm and creative approach to high-quality cuisine.
• Demonstrated understanding of Australian food safety and HACCP.
• Monitor and produce quality dishes in all stages of preparation and organisation.
