Qualifications

• Familiarity with Persian/Iranian cuisine is a plus.
• Ability to work evenings, weekends, and public holidays.
• Understanding of kitchen stock control and minimising food waste.
• Certifications SIT30921, SIT30821, or Certificate IV in Kitchen Management are relevant.

Responsibilities

• Inspect all incoming meat, vegetables, and other ingredients to ensure freshness and quality before use.
• Set and monitor temperatures for grills, ovens, and other cooking equipment throughout service.
• Prepare and cook Mediterranean and Middle Eastern dishes including kebabs, grilled plates, rice, breads, and sauces.
• Adjust seasoning during cooking to maintain consistent flavour profiles.
• Portion cooked meals accurately and arrange plates with garnishes, sauces, and sides.
• Store prepared ingredients and cooked food in cool rooms and freezers at correct temperatures.
• Prepare special meals for dietary needs such as gluten-free, dairy-free, or halal requirements.
• Assist with planning weekly specials and estimating ingredient quantities based on customer demand.
• Train and guide junior kitchen staff and apprentices in food preparation and safety procedures.
