Job summary

The Cumberland in Pascoe Vale, part of Pegasus Leisure Group, invites applications for a full-time Commis Chef. Join a busy kitchen team delivering high-quality dishes and fast service in a community-focused pub environment.

We value food safety, teamwork and a hands-on attitude. Cert III/IV in Commercial Cookery or equivalent, experience in a busy venue, and flexibility for nights and weekends are essential.

Qualifications

• Cert III or IV in Commercial Cookery or equivalent real-world experience.
• Food Allergens and Do Food Safely Certificate required.
• Experience in a busy pub, bistro or high-volume kitchen.
• Solid understanding of basic cooking methods and recipe execution.
• Willingness to work a rotating roster including nights, weekends and public holidays.

Responsibilities

• Cook and prep menu items to high-quality standards.
• Support senior chefs with prep, plating and service during busy periods.
• Maintain food safety and hygiene at all times.
• Run your section during service and keep the pass moving.
• Keep your station clean, organized and ready for the next wave.

Job description

We’re looking for an experienced and motivated full‑time Commis Chef to join the team at The Cumberland in Pascoe Vale. If you’re all about good food, good people and a bit of controlled chaos — we’d like to hear from you.

You’ll work with a solid kitchen team who know how to get the job done, back each other, and still have a laugh when things get hectic. From prep to pass, it’s hands‑on, fast‑paced and never boring.

A new chapter begins at The Cumberland. Located on Cumberland Road in Pascoe Vale, The Cumberland is the reimagining of the former Pascoe Vale RSL — built around the idea of a true neighbourhood pub where locals can gather, share a drink and feel at home.

While our doors are open, this is just the beginning. The venue is evolving, with new dining experiences, refreshed spaces and a renewed focus on community still to come.

About Us

Pegasus Leisure Group (PLG) is the hospitality arm of the Melbourne Racing Club, managing a growing network of 17 pubs, clubs and hospitality venues across Victoria. Our venues include bistros, sports bars, function spaces and gaming areas, each focused on delivering great hospitality experiences within their local communities.

What You’ll Be Doing In The Kitchen

• Cooking and prepping menu items to our high‑quality standards
• Jumping in to support senior chefs with prep, plating and service when things get busy
• Keeping food safety and hygiene locked in at all times (non‑negotiable)
• Running your section during service and keeping things moving on the pass
• Keeping your station clean, organised and ready for the next wave of tickets

What We’re Looking For

• Cert III or IV in Commercial Cookery (or equivalent experience in the real world)
• Food Allergens and Do Food Safely Certificate
• Experience in a busy pub, bistro or high‑volume kitchen
• Solid understanding of basic cooking methods and how to execute a recipe properly
• Willingness to work a rotating roster including nights, weekends and public holidays
