Pullman and Mercure Brisbane, part of the Accor group, are seeking an experienced Chef de Partie to join our culinary team. You will supervise kitchen activities, ensure HACCP-compliant hygiene, and contribute to menu development within a vibrant hotel environment.

Qualifications

• Previous experience in a similar role and environment.
• Excellent technical knowledge with experience in all cooking techniques and styles.
• Excellent organisational skills & grooming standards.

• Passionate about providing exceptional product and committed to undertake growth and development within the Pullman brand.

Responsibilities

• Manage and coordinate activities within your assigned kitchen section.
• Ensure efficient workflow and seamless coordination with other kitchen areas.
• Maintain impeccable hygiene and kitchen standards in line with HACCP requirements.
• Prepare and cook dishes according to our menu specifications and quality standards.
• Train and mentor junior kitchen staff, including apprentices and commis chefs.
• Assist in menu development and implementation of new food concepts.
• Collaborate with the sous chef and executive chef to maintain kitchen efficiency.
• Monitor and control food waste, stock levels, and kitchen resources.
• Adapt quickly to changing priorities during busy service periods.

Job Description

We are currently seeking full‑time and part‑time skilled and passionate Chef de Parte to join our culinary team at Pullman and Mercure Brisbane.
