Job summary

Saigon Palace Cafe on the Sunshine Coast is seeking a Chef to join our kitchen team. The role involves preparing authentic Vietnamese dishes under the Head Chef in a busy restaurant environment.

We require at least 1 year in a commercial kitchen, with a positive attitude and the ability to work under pressure during peak periods. Experience with Vietnamese bread rolls and herbs is a plus. Salary ranges AUD 80,000–85,000 annually.

Qualifications

• Minimum 1 year in a commercial kitchen.
• Commercial cookery qualification preferred but not essential.
• Positive, friendly and enthusiastic attitude.
• Ability to work under pressure in a high-volume environment.
• Excellent communication and relationship skills.
• Experience making Vietnamese bread rolls, rice paper rolls and spring rolls.
• Knowledge of Vietnamese ingredients/herbs to prevent allergies.
• Willingness to work on weekends.
• Long-term, full-time commitment.
• Good presentation and time management.

Responsibilities

• Ensure the consistency of all menu items across service periods.
• Collaborate with Head Chef and kitchen team for smooth delivery of food to guests.
• Operate kitchen equipment to support à la carte and function service.
• Assist staff during rush hours and minimize wastage.
• Maintain HACCP and food safety standards on shift.
• Respond to Head Chef requests to support venue operations.
• Maintain service standards during peak periods.
• Maintain a can-do attitude and contribute to overall venue success.

Job description

Saigon Palace Cafe is a cosy full-service restaurant that serves authentic Vietnamese cuisine. The extensive menu offering includes a wide variety of meals including traditional beef soup, rice paper rolls, fresh salads, stir-fried dishes among others.
We are currently looking for a Chef to join our team.
Salary Range AUD 80,000 – AUD 85,000 annually.

The Role

Demonstrate understanding of food preparation and production in the kitchen department, whilst taking direction from the Head Chef to ensure smooth operation of all kitchen duties.

Key Responsibilities

Your tasks at the restaurant will consist of:

• Ensures the consistency of all menu items regardless of time of day or period of service
• Day to day effective involvement in food operations.
• Liaising with Head Chef and kitchen team to ensure smooth delivery of food to guests.
• Operation of kitchen equipment to achieve required results for ala carte and function service
• Work with the head chef to advance and improve current food operations.
• Has understanding of stock control and works together with the Head Chef to minimize wastage.
• Compliance and understanding of food safety policy and procedures (HACCP)
• Follows kitchen systems, policies, and procedures on shift.
• Responding to the Head Chefs requests to perform other tasks from time to time which contribute to the overall success of the venue’s -operations.
• Maintaining service standards particularly during peak periods
• Maintain a ‘Can-do’ attitude in the face of adversity

Skill & Experience

The Requirements:
To be considered for the position you must meet the following requirements:

• All applicants must have at least 1 years of experience in a commercial kitchen
• Commercial cookery qualifications are preferred but not essential. All applicants are encourage to apply.
• A positive, friendly and enthusiastic attitude
• The ability to excel under pressure in a high-volume environment with excellent problem-solving skills
• Strong communication, negotiation and relationship skills
• Have a strongly skill of making Vietnamese bread rolls, Rice Paper Rolls, Spring Rolls, Dimsim, Wonton to assist staff during rush hour.
• Have a strongly knowledge background of Vietnamese Cuisine including ingredients such as herbs and seasoning in order to prevent allergic issues.
• Demonstrated and verifiable prior experience
• Excellent people and time management skills – ability to work with international staff
