Motorino Pizzeria is an authentic Italian pizza and pasta restaurant on Vernon Street in South Kingsville, in Melbourne's inner west. Established in 2010, the restaurant has built its reputation on traditional recipes, fresh ingredients and homemade goodness, serving a menu of pizza, pasta and dolce that also caters for vegetarian, gluten‑free, vegan and children's diets. The business trades six evenings a week for dine‑in and takeaway, takes group bookings for birthdays, baptisms, anniversaries and work functions, caters large orders, and delivers through its own online ordering platform, UberEats and Menulog across South Kingsville, Spotswood, Newport, Altona North, Williamstown, Yarraville, Seddon, Kingsville, Footscray and Brooklyn.
The Chef will lead the kitchen at Motorino Pizzeria, taking responsibility for the preparation, cooking and presentation of every dish leaving the pass across dine‑in, takeaway, delivery and function service.
Working closely with management and the front‑of‑house team, the Chef will plan and cost the menu, manage ordering and stock, uphold food safety standards and coordinate and train kitchen staff, ensuring the restaurant continues to deliver the authentic Italian quality its customers expect during busy evening trade and large group and catering orders.
Prepare and cook pizza, pasta and other menu dishes to a consistently high standard across all stages of production and presentation.
Plan menus and specials, estimate food costs and order food supplies in line with the restaurant's budget and quality standards. Discuss food preparation, daily specials and dietary requirements with management, kitchen staff and wait staff so that service runs smoothly. Demonstrate cooking techniques and advise kitchen staff on cooking procedures and portioning.
Take stock of ingredients and equipment and place orders to replenish stock and maintain supply for dine‑in, takeaway, delivery and function trade. Maintain food safety and hygiene standards throughout the kitchen, including storage, handling, cleaning and record keeping. Coordinate, train and assist kitchen staff during preparation and service.
Australian citizens and permanent residents are encouraged to apply. Certificate III in Commercial Cookery or Certificate IV in Commercial Cookery (Hospitality).
A minimum of one year of experience as a chef or cook in a commercial kitchen. Sound knowledge of Italian cuisine, particularly pizza and pasta preparation, and the ability to cost menus, manage stock and ordering, and maintain food safety and hygiene records. Strong communication and organisational skills, the ability to lead and train kitchen staff, calm and effective problem solving during peak service, and availability to work evenings and weekends.
