Job summary

The Observer Hotel, operated by Barrelhouse Group in Sydney, seeks an experienced Cellar Manager for its opening team. This role will own the cellar, beverage inventory and day-to-day operations, including keg management, stock rotation and maintaining line cleanliness.

You will work with venue managers and bar staff to ensure smooth beverage service, accurate records and a spotless, compliant cellar environment.

Qualifications

• Experience managing a cellar or beverage operation in a pub, bar or hotel setting.
• Strong knowledge of draught beer systems and keg management.
• Excellent inventory and stock control capabilities.
• Clear communication with management and bar teams.

Responsibilities

• Oversee day-to-day cellar operations and organisation.
• Receive, check and store beverage deliveries correctly.
• Manage keg stock, rotation and changeovers.
• Maintain stock levels and monitor inventory with management."
• Conduct regular beverage stocktakes and maintain accurate records.
• Ensure cellar cleanliness, hygiene, and safe storage conditions.
• Maintain beer lines and related equipment per schedule.
• Assist with bar mise en place ahead of service.
• Communicate stock levels, shortages and upcoming requirements.
