Job summary

Accor’s Mercure Sydney Manly Warringah is seeking an experienced chef to lead breakfast operations and support banquet services. You'll supervise kitchen activities, ensure food quality, and help manage costs while maintaining high standards of hygiene and safety.

The role collaborates with events and floor teams to deliver memorable dining experiences for guests, with a rotating roster including weekends and holidays.

Qualifications

• Previous experience as a Chef, with a focus on breakfast cuisine preferred.
• Strong leadership and organizational skills to manage the kitchen and team.
• Culinary degree or equivalent experience in a high-volume kitchen.
• Flexible and adaptable, willing to work as part of a kitchen team.
• Ability to work calmly under pressure while maintaining high standards.
• Good communication and grooming standards.

Responsibilities

• Work mainly breakfast shifts and ad-hoc lunches/dinners as required.
• Contribute to menu planning and execution.
• Control food and wage costs, ensuring they stay on budget.
• Assist in event planning and execution.
• Through knowledge of menus, control portioning and preparation quality to create great dishes.
• Implement hotel regulations, policies and procedures.
• Provide information on menu items to events team and floor operations to assist guests.
• Maintain industry knowledge and stay updated on trends and dietary developments.
• Train and promote compliance with food safety standards, hygiene and OH&S in kitchens.
• Direct report to Hotel General Manager and Portfolio Director of Food & Beverage.
• Contribute to the hotel's success and pride in serving guests.
• Work alongside passionate industry professionals
